Chocolate Angel Food Cake With Wild flower Honey And Fresh Berries

This is a beautiful dessert which is low in fat, and versatile enough to make everyone happy. You can use chocolate or regular angel food cake which you can purchase or make a cake as given below. There are 3 basic steps to follow for the cake.
Preheat oven to 400 degrees
¾ cup sifted cake flour
5 tablespoons cocoa powder
½ cup fine white sugar
sift the above ingredients together 2 – 3 times so it is nicely incorporated
1/34 cups egg whites (at room temp)
¾ teaspoon salt
¼ cup fine white sugar
1 ½ teaspoons cream of tartar
1 teaspoon vanilla
using an electric mixer beat egg whites and salt til foamy, then add cream of tartar and continue to beat til soft peaks form. Now add the ¼ cup sugar and beat mixture until it is stiff, the mixture should have a nice shine but not be dry, now fold in vanilla.
Now gradually add the dry flour mixture into the egg mixture, fold in together. Spoon batter mixture into an ungreased tube pan / angel food cake pan, bake for 30 – 35 minutes, let cool upside down with a bottle in middle of pan.
Yogurt
Mix together
1 cup low fat vanilla yogurt
1 tablespoon wildflower honey
To Plate:
Pour most of yogurt mixture onto a large plate / bowl, set cut pieces of cake onto yogurt, top with mixed fresh berries and cut fruit, drizzle remaining yogurt over, garnish with mint sprigs, and dust powdered sugar.
