July 27: Orange Char Siu Ribs
POSTED: 8:44 am MDT July 27,

Baby back ribs in a Chinese BBQ sauce with orange, glazed with honey and finished with sesame seeds and scallions.
1 slab pork Baby Back Ribs
1/2 cup plus 2 TBS Lee Kum Kee Char Siu Sauce
1/2 cup orange juice
3-4 TBS honey
2 TBS toasted sesame seeds
1 TBS minced green onion
Cut ribs into single rib pieces. Place Char Siu and orange juice in a bowl and blend well with a fork. Brush sauce over ribs and marinate at room temperature for 1 hour, or in refrigerator for 6-12 hours.
Place ribs in single layer in foil or roasting pan – cover with foil and roast on an indirect grill until tender, about or 45 minutes.
Remove from pan and grill with indirect heat until sizzling and browned. Brush with honey and continue cooking with indirect heat to glaze. Transfer to a platter and sprinkle evenly with sesame seeds and minced green onion.
Chef’s Notes: 1-2 TBS orange juice concentrate can replace 1-2 TBS of the orange juice for a more intense flavor. This recipe can be adapted for oven roasting, or indirect grill roasting without a pan. Longer cooking times mean more tender ribs – do not rush, the glaze is sweet and will burn quickly. – Chef Michaelangelo (mick) Rosacci, www.TonysMarket.com -- www.TonyRosacciCatering.com
