August 2: Roasted Beet Salad With Haystack Farms Goat Cheese

2 large beets (golden or red)
1/2 lb of field green
1/2 cup orange segments
2 oz goat cheese
2 tb roasted walnuts
1 ts olive oil
½ of lemon juice
Salt and pepper
Toss the beets in a little oil, season with salt and pepper. Wrap them in foil and place them in a 350 degree oven for about 30 minuets or until tender. Once the beets are roasted, the skin will slide off. Slice them how ever you like. In a large bowl place the field green, oranges, goat cheese and walnuts. Lightly toss. Add the olive oil and lemon juice, season with salt and pepper. Serve on your favorite platter.
